The Quince (Cydonia Oblonga) is the sole member of the genus Cydonia and it originates from the southwest Asia and the Caucasus region. Its fruit is yellow to gold when it is mature. The exocarp is initially fluffy and then smooth and glossy. Its flesh is yellowish. They are widely used in cooking and confectionery. Specifically, the fruit can be jams, preserved sweets and quince paste. It has a high water and potassium content and also contains vitamin C, A and B. It contains dietary fibers in generous quantities, while between its nutritional substances are phosphorus and iron. The fruit also contains large amounts of tannin that has strong antioxidant and cell aggregates, and has 60 calories in 100 grams.
